Canning and Preserving

Pear Preserves:
Preparation: 
1. Wash all mason jars and lids.
2. Pick as many pears as you like (usually 3 five gallon buckets). I recommend picking greener pears. Ripe (yellow) pears cook down to mush.
3. Peel the pears.
4. Rinse pears after peeling.
5. Cut pears into small slices (wedge slices) - not too thin, not to thick.
6. Large pot for pears and sugar to cook (as many as necessary).
7. Quart sized measuring cup

Recipe:
    2 . 1 Ratio
1. Turn stove on medium/high heat
2. Measure 1 quart (4 cups) of pears and pour into pot. Follow with 2 cups of sugar.
* repeat until pot is almost full
3. Stir ingredients and bring to a boil (takes approximately 30 minutes to boil)
4. After boiling occurs and a syrup is formed, turn stove down to medium/low
5. Use the 1 quart measuring cup to dips preserves out of pot and pour into jars.
6. Seal jars and sit on the ground. Wait for lids to pop. That means you are done and the cans have sealed.

Preparations Time: 1 hr. (depends on amount of pears) + 1hr. (pouring preserves into jars)
Cook Time: 3 hrs.

Repeat measuring 2 cups of pears, 1 cup of sugar into pot until pot is almost full


Tip:
Use 1 Quart measuring cup. It makes make measuring easier and faster.



Tip
Bring mixture to a boil. As soon as you pour your first measuring cup of pears into the pot along with sugar, turn stove on medium/high heat

Step 3
Stir mixture while cooking on medium/high heat. Look for syrup to boil. Then turn down (low/medium) and let cook for 3 hours.


Step 4
Pour mixture into washed jars using 1 quart measuring cup. Let jars sit until you hear a "POP". Once they pop, the fun literally doesn't stop. It means they are sealed and ready to eat...let the fun begin!

200 4oz. mason jars later...good times!
